Ingredients:
2 sweet potatoes, cut into cubes
Oil for frying
2 garlic cloves, crushed
1/4 cup olive oil
1/4 cup cold water
1 teaspoon coarse salt
1/2 teaspoon black pepper
1 teaspoon sweet paprika
1/2 teaspoon cumin
2 green onions, chopped
Juice of 1 lemon
Method:
Place the sweet potato cubes in boiling water with a teaspoon of coarse salt and cook until just tender, about 10 minutes.
Drain directly into a colander to remove excess liquid. After a few minutes, fry in hot oil until beautifully golden.
Meanwhile, heat olive oil in a pan and sauté the crushed garlic. Add the spices and stir well.
Add the lemon juice (half a lemon) and water to the pan. Keep the mixture on low heat, shaking the pan gently to mix.
After about a minute, remove from heat and immediately pour over the fried sweet potato cubes in a bowl. Toss to coat the potatoes with the sauce.
Arrange on a plate, sprinkle with chopped green onions, and squeeze fresh lemon juice over the top for a delightful finish.
